Grilled Summer Corn and Green Onion Hummus Bites

  • Produce
  • 1 large cob of corn, husk and silk removed
  • 2 green onions
  • 2 tbsp finely chopped fresh cilantro
  • 1 cup organic prepared hummus
  • Dairy
  • 1/3 cup of crumbled feta cheese
  • Baking & Spices
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp chili powder
  • Condiments
  • 1 tbsp olive oil


Preheat grill to medium-high; grease grate well. Brush corn with oil; season with salt, pepper and chili powder. Grill corn, turning, for 10 to 12 minutes or until tender and grill-marked all over. Grill green onions, turning once, for 3 to 5 minutes or until grill-marked. Let cool completely.

  1. Slice corn kernels from cob and finely chop green onions. Toss together corn, green onions, feta and cilantro.
  2. Spread 2 tsp hummus over each cracker. Top with corn mixture.
